Vegan Queso!

I have always loved cheese, so when I switched to a plant-based diet I wanted to find some great recipes to replace the cheesy goodness that I love so much. I think this recipe is a winner! We drizzled it over our tacos and ate it with chips until we were stuffed! It's pretty simple and customizable. Only 4 main ingredients!
Ingredients:
1 1/2 cups soaked cashews
1 cup almond milk (may need more)
3 heaping spoon-fulls of your favorite salsa (I use spicy for an extra kick)
Spice blend of 3 tbsp nutritional yeast, 1 tbsp garlic powder, 1 tbsp onion powder, a dash of salt & pepper!
Directions!
1) Soak cashews in room temperate water, until covered for at least 2 hours (or until soft).
2) Rinse cashews and place in high speed blender! 3) Add milk, salsa, and spices!
4) Blend until very creamy, may need more milk!
5) Optional* For a chunky salsa, add freshly chopped tomato, onion, and jalepeno!
6) heat up over stove top on low heat until warm, keep stirring the whole time!
7) Enjoy:)
