Shredded jackfruit tacos

Jackfruit ~ the ultimate plant based meat replacement. I love this easy peasy taco recipe. It's simple and delicious. Enjoy:)

Ingredients
~ 2 cans young green jackfruit in brine (I use the Trader Joes brand quite a bit because not all stores in my area have jackfruit. If you're not planning on being around a Trader Joes any time soon, hit up amazon!)
~ 1 packet of taco seasoning (this is to make it easy, but you can create your own seasoning blend using garlic powder, onion powder, smoked paprika, cumin, chili powder, salt, and pepper)
~ 1/2 yellow onion
~ 1/2 can green chiles
~ 1 tsp liquid smoke
~ taco toppings of choice & chips:)
Directions
~ Drain and chop jackfruit. (you can use ALL parts of the jackfruit. Some people prefer to chop off the core pieces, but when cooked down they become soft and you cannot tell the difference!)
~ Dry rub the jackfruit with seasoning mix
~ in a large saucepan, heat up 1 tbsp oil of choice and add chiles and onion. Cook until translucent. Keep heat and medium/low.
~ Add jackfruit to the saucepan, stir often. (jackfruit may become dry or stick to the bottom while cooking so I often add a little bit of water throughout to keep it moist.
~ Cook for about 15-20 minutes or until jackfruit becomes soft and pulls apart easily.
~ Turn off heat and create your tacos the way YOU like them:)
