Crunchy Asian Salad

I'm not one for a really leafy salad. I like texture and crunch! This salad is all of that and more:) Check it out!



Ingredients

~ 1 bag of coleslaw mix (depending on your desired serving size, 1 bag is enough to feed a family of 4)

~ 1/2 bag of pre-shredded carrots or about 3 large carrots you can shred yourself

~ 1 bundle of chopped green onion (about 5 green onions)

~ chopped sugar snap peas (optional)

~ 1 cup chopped nuts (I used Cashews, but you can also use peanuts)

~ 1 handful chopped cilantro

Now for that crunch! ~ 1 packet of ramen noodles or chow mein noodles

~ 1/2 a lime for lime juice

~ sesame ginger Asian salad dressing


Directions

~ chop all veggies and add to bowl

~ add noodles. Crunch up the noodles into tiny pieces with your hands and mix thoroughly.

~ add dressing only right before serving so the noodles to not get soggy!
