Vegan Mac & Cheese (oil free)

Nothing says Ultimate Comfort Food quite like a creamy, cheesy Mac & Cheese ~ enjoy this recipe!



Ingredients ~

1 large potato (peeled & chopped into chunks)

3 large carrots (peeled & chopped into chunks)

1/2 yellow onion

6 cloves garlic OR 2 tbsp minced garlic

1/2 cup cashews (soaked)

1 cup unsweetened almond milk

Macaroni noodles, or noodles of choice

Seasonings - 1 cup nutritional yeast, 1 tbsp onion powder, 1 tbsp garlic powder, 1 tsp ground mustard, 1 tsp turmeric, 1 tsp paprika, 1 tsp chile powder, 1 tbsp salt, pepper to taste.



Directions

1) In heavily salted water, boil potato, carrots, onion, and garlic until soft

2) In the meantime, be soaking the cashews in hot water

3) Cook noodles as directed and set aside

4) In high speed blender, add veggies, cashes, milk, and all seasonings.

5) Blend until very creamy

6) pour over noodles and enjoy!!!
