Rice paper spring rolls

This recipe is so delicious. I love Asian cuisine and this recipe is no exception. They are so light and fresh, also very pretty too:) You can customize to add any ingredients you want. In our family, we prep all the veggies then everyone makes their own spring rolls so they can customize then just the way they want - everyone is happy!



Ingredients:

1 package of rice paper rolls, can be found in the international section of the store

1 package vermicelli noodles

soy sauce

veggies to use:

cucumber

bell peppers, any color

carrots

red cabbage

radish

collard greens

cilantro

limes

acovado

red onion



Directions:

1) cook vermicelli noodles as directed on package, rinse with cold water, drain, and set aside

2) prep all veggies. I like to chop them matchstick style, very thinly!

3) prepare rice paper rolls, I recommend just making one at a time. They can be tricky at first, but once you do it, it comes more easily!

4) fill paper with noodles, veggies of choice, cilantro and a squeeze of lime juice

5) fold spring roll like you would a burrito - the rice paper is kinda like cling wrap, so it will be very sticky!

6) use soy sauce, or sauce of choice for dipping, enjoy!!!
