Ladies Day Out Salsa!

This salsa is a WINNER! My Aunt introduced my family to this recipe many years ago and it has become a go-to for us. It's so easy to make and we always do a huge batch because it goes pretty fast in our house. You must try this - you will not regret it!



Ingredients *for a big party sized batch* ***1/2 the recipe for smaller batch

2 cans black beans, washed and drained.

2 cans shoe-peg, or white corn. Drained.

1 large red onion, rough chop *we like a very chunky salsa*

8 large roma tomatoes, rough chop

1/2 cup olive oil

the juice from 3 limes

1/2 a bundle of cilantro, finely chopped

2-4 tbsp cumin *depending on spice preference



Directions:

1) prep beans & corn as directed

2) chop all veggies & cilantro

3) combine in large bowl adding oil, lime juice, and cumin.

4) combine well

5) serve with chips! *I do not add salt to this recipe, the saltiness comes from the chips!
