Hearty Veggie & Kale soup

If it's a rainy day, It's a crockpot day! I made this soup right before I came down with a cold. Boy, was I happy to have soup to heat up for the week. This is a classic veggie stew with a twist - adding fresh kale right at the end. Delish:)

Ingredients
5 small red potatoes, cubed (I leave the skin on)
3/4 cups of chopped celery
1/2 cup carrots chopped
1/4 cup white onion chopped
1 tbsp minced garlic
1 tbsp oil
1 quart veggie stock (may need to add 1/2-1 cup of water)
Handful of chopped kale
Seasoning:
2 bay leaves
garlic powder
salt & pepper to taste
Paprika
dried rosemary
nutritional yeast (optional)
chile powder (optional)

Directions:
1) Heat oil in crockpot on low
2) add celery, onions, garlic, and carrots
3) Sweat until translucent, about 20 minutes
4) add broth and potatoes and all seasoning
5) cook for 5-6 hours on low to medium heat
6) remove bay leaves
7) add kale right before serving (will be bitter if cooked too long)
