Garlic Mashed Potato Pancakes

This is a typical day-after-thanksgiving meal at our house. We purposely make extra mashed potatoes just for this purpose! Totally easy and a great way to use left over mashed potatoes. This recipe is also totally customizable to your preferences.
Ingredients:
left over mashed potatoes
1 egg (optional)
Chives for garnish (optional)
2 tbsp or butter or oil substitute (I use grapeseed oil)
salt & pepper to taste
garlic powder
Crushed potato chips or panko crumbs (optional for crispy crust)
Directions:
1) Combine one egg and seasoning with mashed potatoes
3) form mashed potato pancakes in your hands (may get sticky)
4) Roll pancake in crushed potato chips or panko (optional)
5) heat oil or butter in Saucepan on medium-low heat
6) cook pancakes in oil until golden brown and crispy
7) garnish with chives & enjoy!
It’s true! Those garlic mashed potatoes made on the day after Thanksgiving are a treat! 😋
