Fresh Caprese

Tomato season is upon us. I love collecting colorful tomatoes from the garden and using them for all sorts or recipes. This is just a very simple open faced sandwich idea, but such classic flavors:) Perfect for a summer day. Hope you enjoy!

Ingredients:
2 large tomatoes, any color
2 pieces of ciabatta bread
vegan mozzarella *optional, I did not use this
4 fresh basil leaves, chopped
balsamic vinegar glaze
freshly ground black pepper to taste
1 tbsp olive oil
1 tsp garlic powder
1 tsp salt

Directions:
1) preheat oven to 350
2) on small baking sheet, place bread. Lightly cover with olive oil, garlic powder and salt. Cook for 10 minutes.
3) While bread is cooking, slice tomatoes to desired thickness and chop basil
4) When bread is done, top with tomatoes, basil, balsamic glaze, and mozzarella
5) Enjoy this fresh snack:)
