Cucumber Fresca Salad

Happy Easter everyone! So, you're invited to an Easter party and asked to bring a side dish. Choose something fresh & clean... like this salad! Pros of making this salad: only 4 ingredients, super cheap, short prep time, everyone will love it, it will be the talk of the party. Cons: ...........none! I hope you enjoy this delicious recipe

Ingredients:

1 french baguette

3 english cucumbers

6 roma tomatoes

1 small red onion

2 tbsp Italian seasoning

salt & peper to taste

3 tbsp olive oil

Directions:

1) Preheat oven to 350 degrees

2) Cube bread, lightly cover in olive oil & salt and pepper

3) Bake bread in oven for 15 minutes

4) while bread is baking, dice all veggies and place in large bowl

5) mix in seasoning and stir well

6) add croutons RIGHT BEFORE serving so they don't get soggy.

7) garnish with freshly grated parmesan (optional)

8) serve & enjoy
