Crispy Greek Falafel

I tried falafel for the first time while on vacation in NYC. My boyfriend and I found this greek food truck and being gyro lovers, knew we had to try it. I'd never had falafel before, so it intrigued me. I fell in love guys... seriously it was so good. I remember it tasting like a really flavorful hush puppy. Flash forward almost a year from that trip and I finally tried to make it myself. Let me tell you, it was a success and it is sooooo easy to make, I don't know why I didn't try it sooner. Hope you enjoy this one!
Ingredients:
1 can chickpeas, drained
1 tbsp olive oil
2 handfuls fresh parsley
3 garlic cloves, minced
juice from 1/2 lemon
1 small vadaila onion
1 tbsp salt
1 tsp pepper
1 tbsp garlic powder
garbanzo bean flour *I used Red Mill
*vegetable oil for frying
Directions:
1) using a food processor, add can of drained chickpeas and olive oil. Process until thick, but keep a little chunky.
2) To processor, add onion, parsley, garlic, lemon juice, salt and pepper! Process until all is well combined and smooth.
3) Transfer mixture to a bowl and add garbanzo bean flour. *how much depends on how wet your mixture is. Start with 1/2 cup! Add flour and mix with hands until well combined and not as wet anymore.
4) In frying pan, add think layer of oil. keep on medium heat.
5) spoon out the falafel mixture into tiny balls and place on fryer. About 45 seconds each side, or until desired crispy-ness haha I've made batches that were really crispy and not too crispy. I think I prefer the really crispy version:)
6) serve with tahini cause, ranch, or mustard! YUM! So easy
