Cauliflower Tacos!

Plant-based alternative for a classic Stephan family meal. This summer has been all about coming up with ways to turn our favorite meals into vegan options... we couldn't forget about TACOS! This is delicious and super easy too:) Give it a try!

Ingredients:
1 head cauliflower
1 cup walnuts
1 taco seasoning packet
2 tbsp cooking oil
soft or hard shells or chips for nacho style
favorite veggies toppings:
tomatoes, lettuce, onions, limes, cilantro, avocado
vegan queso *see recipe:)

Directions:
1) In food processor, process one head of cauliflower and walnuts until well chopped
2) In saucepan, on medium heat, heat oil and add cauliflower/walnut mixture
3) add taco seasoning, and cook for about 10 minutes on medium heat, stirring often! 4) Chop all your favorite taco veggies
5) Assemble your taco!!!
