Cauliflower Curry

This is curried adaptation of cauliflower rice! Have fun counting all the "C's" in this recipe. It sure is flavorful:)

INGREDIENTS
- 1 head cauliflower
- curry powder
- handful cilantro for topping
- cashews for topping
- coconut milk
- other spices (turmeric, paprika, garlic powder, salt & pepper)
- lemon

DIRECTIONS
- wash the cauliflower and break into small chucks for food processor
- pulse, adding more cauliflower gradually, until texture/size is that of fine rice grains. (may need to process in 2 batches)
- pour cauliflower rice into large bowl and add spices, mix thoroughly.
- 1-2 tbsp of curry powder depending on personal preference
-1 tsp of turmeric, paprika
- add garlic powder, salt, and pepper to taste
- large saucepan on medium heat. Add rice.
- stir continually for 4-5 minutes
- add lip and simmer on low medium heat for an additional 4-5 minutes
- remove from heat and add toppings of choice
- serve and enjoy!! :)
