Barbecue Jackfruit Pizza

Jackfruit is the perfect replacement for chicken - especially on pizza! You can totally make it your own. Try is as a buffalo pizza, or even chicken bacon ranch.

Ingredients
1 can of green young jackfruit in brine. I always use the trader joes version:)
1 flatbread
your favorite barbecue sauce
pizza sauce
red onion
cilantro
sour cream or greek yogurt (I used vegan sour cream)
garlic powder 1 tbsp
liquid smoke 1 tsp
2 tsp smoked (or regular) paprika
salt & pepper to taste
Directions
1) drain and chop up jackfruit in bite size pieces (you can use all of it, some people discard the core or seed because of texture, but all parts are edible and they soften up when you cook them down anyways! Might as well not waste any)
2) Preheat oven to 425
3) in a medium sized skillet, heat up 2 tbsp veggie oil on med/low heat
4) add jackfruit to pan, season with all seasonings, liquid smoke, and a large squeeze of barbecue sauce and cook for 15 minutes or until tender.
5) you may need to add some liquid to the pan if the jackfruit begins to stick to the bottom or look like its drying out! Adding a few tbsp of water is okay, it will absorb right up.
5) once jackfruit is cooked, remove from heat and assemble your pizza!
6) On flatbread, add sauce, jackfruit, onion, and another drizzle of barbecue sauce. Cook for 10 minutes or until edges look crispy.
7) Take out of the oven and garnish with cilantro and sour cream drizzle. Enjoy:)
