GF banana nut muffins

I love any banana baked good! These homemade muffins are no exception; they are delicious:) Normally, I use coconut flour, but I decided to switch it up and WOW. Bob's Red Mill baking flour is truly amazing. No more crumbly muffins.

Ingredients
2 cups Bob's Red Mill 1:1 Gluten-Free Baking Flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 tbsp vanilla
1tbsp cinnamon
1/2 cup lightly packed dark brown sugar
3 medium very ripe bananas
2 large eggs, whisked OR applesauce for vegan alternative
1/2 cup oil (I used grapeseed oil)
top with sliced almonds OR walnuts

Directions
1) Preheat oven to 350
2) Grease or line muffin tin with paper liners.
3) (wet ingredients) In a large bowl, mash the bananas with a fork or potato masher. Add brown sugar, oil, vanilla, and eggs.
4) (dry ingredients) Add the gluten-free flour, baking powder, baking soda, cinnamon, and salt. Mix wet/dry together until combined.
5) Fill muffin tin halfway with batter.
6) Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
7) Let cool in tin for 10 minutes before eating or storing (in fridge)
