Coco protein balls

Need a quick energy pick-me-up? This delicious snack will tide you over between meals - but tastes like dessert! They are easy to make and very convenient to store - give em' a try:)



Ingredients:

Handful of pitted dates

1 cup of gluten free oats (or oats of choice)

1/2 cup shredded coconut (sweetened or unsweetened)

1 tbsp of flax seed or ground flax seed

handful of almonds

2 tbsp of baking cocoa powder

2 tsp coconut oil (may need to add more for texture)

2tbsp nut butter (optional)


Directions

Using a blender or food processor add wet ingredients first (dates & oil).

Slowly add other ingredients until thick paste texture has been reached.

With your hands form bite sized balls and place in fridge to set until firm.
